Espresso
60% Daterra Sweet Collection, Brazil
20% Finca Vista Hermosa, Guatemala
20% Kiawamururu, Kenya AA Top
Sweet and full bodied. Clean and balanced. Marzipan and chocolate. High notes of black currant and gooseberries.
The three components of this espresso blend have each been grown with meticulous carefulness resulting in a very clean cup. Combined with our light roast profiles for each component we achieve a very low bitterness.
The espresso is oily and creamy with a caramelly sweetness balanced by a delicate berry-like acidity that gives a sense of life and freshness in the coffee. In the aromas you’ll find the natural notes of marzipan, chocolate and black currants.
Finca Vista Hermosa
Guatemala - Direct Trade
Deep chocolate tones, sweet, heavy body and berrylike acidity. Exceptionally clean and balanced. On a visit to the States we met a young, passionate guy from Guatemala called Edwin D. Martinez. He is the third generation on the coffee farm Finca Vista Hermosa. Edwin is deeply interested in all the aspects of coffee from the farm to the cup. We decided that Edwin should send some samples of his next harvest to Denmark. Half a year later we cupped his coffees and we were astonished! Huge mouth feel and heavy body, complex flavours, caramel sweetness and heaps of chocolate in the aftertaste. We were not in doubt: We’d just purchased out first lot of coffee!
Edwin: ”This particular lot is the Vista Hermosa Lot. It is grown between 1700 and 2000 meters elevation. We have about 70% bourbon 15% caturra and 15% catuai. This lot was the second parcel my grandfather Felipe Martinez purchased. It was bought in 1970.” We have taken this coffee to a medium roast with a steady heat, which yields an exceptional balance between sweetness, acidity and bitterness.
Kiawamururu
Kenya AA Top - Direct Trade
Elegant and full bodied with a fresh acidity and notes of black currant, gooseberry and plum. The Kiawamururu cooperative Wet Mill is led by Patrick Kinyua. At the mill the freshly picked cherries are depulped before a slow wet fermentation for up to 72 hours. Afterwards they are washed and dried on Raised Beds. This produces a remarkably clean and fresh flavour that makes this coffee very elegant. To bring forward these natural qualities we roast this coffee very light with a little more heat towards the end.
HaCienda La Esmeralda
Panama - Direct Trade
A sweet and clean cup. Fresh with a elegant aromas af abricot, bergamot, heather honey and jasmine. At Hacienda La Esmeralda the Petersons grow a small lot of the Arabica variety Geisha. The Geisha originates from Ethiopia and is characterised by an astonishing fruity and floral aroma. The coffee is selectively hand picked and then mechanically demucilaged, washed and then dried with sun or a combination of sun a machine drying.
For the past couple of years the Esmeralda Special has only been sold on an auction held by the Petersons, where roasters from all over the world are bidding against each other. We are very happy that we got a lot and are able to present this coffee for the first time in Denmark. We have roasted this coffee quite light with a bit more heat towards the end, so the freshness and the natural aromas are brought out the most.
Daterra Sweet Collection
Brazil - Direct Trade
Full bodied, very low acidity, syrupy sweetness, smooth, pecan nuts and muscovado sugar.Luis Pascoal’s continuing scientific research has established Daterra as one of Brazil most innovative and respected farms. Every bag of coffee can be tracked back to the specific lot. Daterra’s unique Penta® sorting and packaging system sorts out defects and under- or overripe coffee over several steps.
The Sweet Collection is a pulped-natural coffee. The cherry-pulp is removed in a machine, pulpier, and the parchment beans covered by the mucilage are then dried. This develops more body and sweetness than washed coffee with the advantage of having an extra sorting method in the pulpier. The green coffee from Daterra is not packed in traditional jute sacks but in vacuumed and nitrogen-flushed aluminium foil bags which prolongs the life of the green coffee significantly.
idido
Aricha Microlots, Yerga Cheffe, Ethiopia
Light Roast - Unusually intense aroma of fully ripe strawberries and bergamot.
Dark Roast - Espresso. Full bodied and aromatic with notes of ripe strawberries.
Abdullah Bagersh, who runs the Idido Mill, has perfected the traditional Natural post-harvest processing. While the coffee cherries are dried for several weeks, they are sorted carefully. The result is a very aromatic coffee that’s a lot cleaner than other Naturals. To highlight the intense strawberry notes we have roasted this coffee very lightly with extra heat towards the end.
